Preheat oven to 400 degrees; spray baking sheets with nonstick cooking spray. In a food processor, shred the pear. Remove from the work bowl; set aside. In the food processor, combine the flours, 1 cup sugar, baking powder, baking soda and ginger; process until blended. Add the margarine and butter; process until the mixture resembles coarse crumbs. Transfer to a large bowl. Stir in the pear and buttermilk until a soft dough forms. Turn out the dough onto a lightly floured surface. Knead 8 to 10 times. Roll out the dough into a 1/2-inch thickness; cut into rounds with a lightly floured 2 1/2-inch biscuit cutter. Sprinkle 1 tablespoon sugar over the tops. Bake for 10 to 15 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Remove from the baking sheets. Cool on wire racks for 10 minutes. Serve warm or cool completely. Serve with jam.
