LEMON SCONES

 Scone Ingredients:

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 tablespoon Lemon zest
  • 6 tablespoons Butter; cold -- cut up
  • 1 Egg -- beaten
  • 1/2 cup Milk -- or half and half
  • 1 tablespoon Vanilla extract
  • 1 Egg -- beaten

Scone Preparation:

Preheat oven to 400 degrees. In a medium bowl or a food processor, combine the flour, sugar, baking powder, salt and lemon zest. Cut in the butter pieces until the mixture is crumbly. In a separate bowl, combine the egg, milk and vanilla extract. Add to the dry ingredients and mix until the dough forms a ball. Turn the dough onto a floured surface and knead. Roll out to 1/2-inch thick. Using a 2-inch heart-shaped cutter, cut out the scones, or cut into squares. Place on an ungreased baking sheet and brush with beaten egg. Bake for 10 to 12 minutes, or until light brown. Makes 14 to 18.
