APRICOT OR DATE SCONES

Ingredients:

4 cups All-purpose flour
1/2 cup Granulated sugar
4 teaspoons Baking powder
1 teaspoon Salt
1/2 teaspoon Cream of tartar
3/4 cup Butter
2 tablespoons Orange peel -- grated
1 cup Dried apricots; or dates -- chopped
1 Egg
1 cup Cream
1/2 cup Orange juice
Cream and granulated sugar
Preparation:
Preheat oven to 425 degrees; grease a large baking sheet. In a large bowl, combine
the flour, sugar, baking powder, salt and cream of tartar. Cut in the butter until the
mixture resembles coarse crumbs. Add the orange peel and apricots or dates. In a
small bowl, beat together the egg, cream and orange juice. Add to the dry ingredients
and mix lightly with a fork until a soft dough forms. Turn the dough out onto a lightly
floured surface and knead gently 5 or 6 times. Divide the dough into quarters and roll
each to a 1/2-inch thickness. Cut into wedges. Place the scones on the prepared
baking sheet. Brush with cream and sprinkle with sugar. Bake for 15 to 18 minutes.
