easy to prepare, there is an art to making them the right consistency and thickness.

CHEESE AND BASIL SCONES

Ingredients:

2 cups Flour
1/4 cup Grated Parmesan or Romano
2 teaspoons Baking powder
1/2 teaspoon Baking soda
2 tablespoons Fresh basil -- chopped
2 teaspoons Dried basil
1/4 teaspoon Freshly ground black pepper
2/3 cup Low-fat buttermilk
3 tablespoons olive oil
Nonstick vegetable spray
1 tablespoon Egg substitute or
1 Egg -- beaten (optional)
Preparation:
Preheat oven to 450~. Combine flour, cheese, baking powder, baking soda, basil and
pepper in medium bowl. Add buttermilk and oil; mix until dry ingredients are
moistened. Divide dough into 2 balls. Knead gently 3 times on floured surface. Spray
cookie sheet with vegetable spray. Pat dough into 2 circles 7-8" in diameter. With
sharp knife, score each disk (1/4" deep) into 6 wedges, but do not cut through. Brush
with egg substitute, if desired, to glaze. Bake 10 to 12 minutes or until golden brown.
Cut into wedges and serve warm or at room temperature.
