PEAR SCONES

Ingredients:

1 Pear -- cored
2 1/2 cups All-purpose flour
1 cup Granulated sugar
1/2 cup Whole wheat flour
1 tablespoon Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Ground ginger
2 tablespoons Margarine -- cold
2 tablespoons Butter -- cold
1/2 cup Buttermilk
1 tablespoon Granulated sugar
Preparation:
Preheat oven to 400 degrees; spray baking sheets with nonstick cooking spray. In a
food processor, shred the pear. Remove from the workbowl; set aside. In the food
processor, combine the flours, 1 cup sugar, baking powder, baking soda and ginger;
process until blended. Add the margarine and butter; process until the mixture
resembles coarse crumbs. Transfer to a large bowl. Stir in the pear and buttermilk
until a soft dough forms. Turn out the dough onto a lightly floured surface. Knead 8 to
10 times. Roll out the dough into a 1/2-inch thickness; cut into rounds iwth a lightly
floured 2 1/2-inch biscuit cutter. Sprinkle 1 tablespoon sugar over the tops. Bake for
10 to 15 minutes, or until golden brown and a toothpick inserted in the center comes
out clean. Remove from the baking sheets. Cool on wire racks for 10 minutes. Serve
warm or cool completely. Serve with jam.
