I think all configurations are in order. So now I can move forward with this journal about my experiences in tea. I generally start the day with a cup of black tea. My favorites are China Black Tea, Ceylon Black Tea, and Ying Ming Yunnan. But today I tried something different. I started with a 2 teaspoons of Ceylon Black Tea (FOP) and added one teaspoon of Assam Black Tea(BOP. It changes the character quite dramatically. A little more astringency, but a deeper robust flavor. It seems to stay on the tongue longer. The Assam tea must not brewed as long or this astingency develops from the release of more tannins. I still prefer Ceylon black tea by itself. Stay tuned... I will be postiing more
